Caesar dressing is a staple in our household. Used with salads and for dipping, this simple dressing can't be beat!
Caesar Dressing Recipe:
Ingredients:
1 egg
1/2 cup peanut oil
2 tablespoons of olive oil
1 teaspoon lemon juice
1/4 teaspoon ground mustard
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon worcestershire sauce
1 tablespoon red wine vinegar
dash of tabasco
2 - 4 garlic cloves, dependant on size and level of spice preference
Crack egg in large measuring cup. Use hand blender and blend egg until slightly beaten. Combine olive oil and peanut oil and slowly add it into the cup in a thin stream, while continuing to blend. Mixture will slowly thicken. Add lemon juice, ground mustard, salt, pepper, worcestershire sauce, red wine vinegar, tabasco and garlic. Blend until fully combined.
Makes approximately 1 cup of dressing. Use immediately or store in fridge for up to four days. If mixture isn't thick enough, add more peanut oil until desired texture.
If you do not have a hand blender, a food processor will also work great!
