Tomatoes a la Polska

So many gorgeous tomatoes coming from the garden! Nothing beats a fresh home grown juicy tomato, providing so many health benefits and deliciousness.


No, I’m not making tomato sauce, I will leave that to my Italian neighbours, the professionals. But a simple way to utilize tomatoes makes for a perfect snack or brunch addition.


A true staple in a Polish household!


Tomatoes a la Polska


Ingredients:

  • 1-2 ripe tomatoes

  • 1/4 raw onion diced

  • Lemon wedge

  • Fresh parsley

  • Himalayan Salt + black pepper

Cut washed tomatoes into slices. Place slices flat onto plate. Dice onion and layer on top of tomato slices. Squeeze lemon all over the plate. Chop parsley and sprinkle on top. Finish off with some salt and pepper over the whole plate and enjoy!


Eat alone, with fresh bread or focaccia.
